The Damo — Chilli Oil Confidently Spicy

Named after the chef himself, The Damo is what happens when Damian gets to make the rules – which means spicier than Ammers, obviously.

Look, we love The Ammers. It's beautiful, it's balanced, it's cautiously spicy. But Damo? Damo looked at that recipe and thought "yeah, but what if we didn't play it safe?" So he turned up the heat, kept all the good stuff (smoky Korean gochujang, crunchy peanuts, toasted sesame, that avocado oil we're all acting casual about), and created something for people who like a bit more excitement in their condiments.

It's not going to make you question your life choices or require a signed waiver – Damo's not a monster. He just believes that spice should have a bit of confidence. This is heat with personality, warmth with depth, the kind of kick that makes you go "ooh, hello" without sending you into witness protection.

Still gluten-free, still fancy, still all about the layers of flavour. Just with more oomph. Because if you're going to name a chilli oil after yourself, you might as well make it interesting.
