The Penny - Sweetly Spicy

Named after Penny, who's been Ammers' mate for over 20 years and is the perfect embodiment of sweet with a spicy side – lovely as anything until you get on her wrong side, then watch out.

We'd been happily making The Ammers and The Damo when someone (okay, several someones) asked "what about hot honey?" And honestly, we thought the same thing. So now our kitchen is perpetually sticky and we're putting this on everything from pizza to ice cream, which feels like the natural progression of any artisan food business that can't leave well enough alone.

This is locally sourced Queensland honey meeting our chilli blend in what can only be described as a very successful arranged marriage. The sweetness hits first – golden, warm, familiar – then the heat creeps in and reminds you this isn't your nan's honey (no offence to anyone's nan). Not aggressive, not timid – just confidently spicy, if honey can be confident (we've decided it can). 

It's the kind of condiment that makes you reconsider what actually needs hot honey on it. Pizza? Obviously. Cheese boards? Absolutely. Fried chicken? Game-changing. Ice cream? Trust us. Roasted vegetables, yoghurt, croissants, or straight onto a spoon at 11pm when you're "testing the batch" – it works everywhere.

Sweet heat that doesn't pick sides because frankly, it doesn't have to. The Penny plays well with everyone.
